Matt Dunn As someone who enjoys making cocktails, and loves using honey to sweeten both drinks and foods, I've tried a lot of local and regional honeys. Koina might not be local, but it's by far the most one I've tasted. It has a rich, floral, earthiness to it that is hard to describe. It's almost striking at first with how unique the taste is, so you do have to be careful as it won't automatically work in all recipes that are looking for more traditional honey. But boy does it shine when you're looking for more unique honey taste!
